An Appetizer with More "Wow" than "How"You head into the holidays like a racehorse. You can take on those mobs at the mall, bake the pants off the local boulanger -- even make your own wrapping paper! Then reality hits. Now you can't find time to stand in line to mail those now-late packages to Montana. You've over-promised and now you are pulling out what's left of your hair trying to figure out how in God's green (and red) earth you are going to pull off making your own appetizer for that holiday gathering. Don't dispair. Do I have a first-class cheater appetizer for you: Feta Cheese and Olive Appetizer. Your friends and relatives will beg you for your "recipe." Your main task is to gather a few simple ingredients, the first of which is fresh feta cheese -- the kind you buy in the deli or a package where the cheese is floating in brine. You can use a the kind wrapped in the standard package in a pinch, but it will need to marinate longer. Next, you will need your seasonings: garlic, whole pepper corns, red pepper flakes and oregano. Here's the secret: extra virgin olive oil. Add some Greek olives and you have an appetizer that is so amazing, only Santa will know cheated!
