Sassy Soup Stands in for Sunshine -- Sort ofIt's one of those Oregon springs where you take what you can get. And I'm talking about sunshine here. Instead of counting on 70-degree days for gardening, you work in spurts between rainstorms. And that is just how we installed a new raised-bed salsa garden in our front yard. But that project is a story for another time. Right now I want to talk about soup. I cannot tell you if soup is really good for the soul. But I'm convinced the right soup will raise your spirits on a drizzly day. This Tortilla Soup will do just that -- and it's certainly reminiscent of sunny places. The taste of chili, cilantro, tomatoes, corn, beans, avocado and chicken with a smack of lime will tingle your taste buds and will take little effort in the kitchen.
